Brooklyn Kitchen Labs Arrives

You may know Williamsburg’s Brooklyn Kitchen for the wares they sell and useful, unusual classes they offer, such as how to butcher a pig, make a pickle, and sharpen knives. In fact, they have become so popular in the three years since they opened that owners Taylor Erkkinen and Harry Rosenblum decided to upgrade space, and rented a 7,000-square-foot warehouse in which to expand.

Named Brooklyn Kitchen Labs, it will be multi-purpose, like its progenitor: a cooking school, butcher shop, brewing and winemaking supply store, according to the New York Times. It opens Nov. 16.

Famed butcher Tom Mylan’s butcher shop the Meat Hook will have a retail counter within. According to the Times, we can expect rillettes and pâtés to be made on the premises, and Mylan, Ben Turley and Brent Young, all formerly of the butcher shop Marlow & Daughters, have joined as partners.

From the Labs: “The mission of the Labs is to bring together a place to experiment and learn about cooking in an a la carte fashion. We offer most of our classes as one session, with no pre-requisites, but will offer a comprehensive course listing so that through one class or 10 you can explore the vast and fascinating world of cooking to the degree that it suits you…

“We are not a specialty food shop, but we specialize in food.”

Sounds promising. Further:

“The Labs will house two full teaching kitchens outfitted with state of the art home appliances, since very few of us have a commercial range at home.”

As they point out, this will be the only cooking school in New York City devoted primarily to the education of home cooks.

The Labs will also offer baking and brewing supplies, a bulk room containing oils, vinegars, beans, flour, chocolate and other ingredients “sourced as locally as possible,” and noteably, a “research library” — a collection of rare and out-of-print cookbooks can be viewed for inspiration. (Alongside these will be the owners’ collection of vintage kitchen tools.)

They include Your Thanksgiving Feast, Latin Favorites with Chef Henry Lopez, Dining Globally at Home, Cake Decorating, Kombucha brewing with Kombuchman and the ever popular, already sold out “Date Night” Pig Butchering. Look for more to come.
