Hidden bakery becomes pastry destination in DUMBO

In the lobby of 68 Jay St. in DUMBO is Burrow, a Japanese bakery whose cakes and cookies baffle well-established pastry chefs and which attracts celebrity customers with little publicity. Ayako Kurokawa and her team of three other Japanese female bakers operate the bakery, according to Bon Appétit.

Burrow’s schedule of Monday through Friday, 9 a.m. to 4 p.m., makes it difficult for some people to visit, and the bakery has no identifying signs on its door or window. Yet, it has managed to rack up 78,000 Instagram followers from around the world, Bon Appétit said. Among Kurokawa’s creations are tomato and Gruyere quiches, smoked salmon cakes, carrot cake made with orange juice, strawberry cake and upside-down pineapple cake. Kurokawa grew up in Japan, came to New York in 2000 and held a variety of jobs before becoming a pastry chef. She doesn’t speak much about herself, preferring to let her pastries do the talking.
